Our pizzas are cooked in an Authentic Italian brick oven. Our Moretti Forni oven can reach temperatures of 840 degrees.
High heat creates flavors through caramelize of sugars that are difficult, if not impossible, to create when pizza is cooked in conventional pizza ovens. High heat also creates interesting textures – it is not uncommon to find at least one flame-blackened blister on our crust.
The dough – A blend of “Caputo 00” Italian flour, known as the world's best pizza flour. We prepare our dough daily allowing the dough to rise at room temperature for the correct amount of time.
Tomatoes – We use imported Italian cherry tomatoes, which are grown in the rich volcanic soil of Mt. Vesuvius.
Cheese – We use only 100% milk mozzarella. Our Vodka pizza features fresh mozzarella, and we also offer Mozzarella Di Buffalo made from buffalo milk, a Neapolitan tradition. Some pies also feature fresh ricotta, grana parmesan.
Herbs – Fresh herbs are essential in our pizzas. Fresh basil is a required ingredient of the Pizza Margherita.
Meats – We use the best Pepperoni, Ham and Bacon made by Boards Head Co; imported of New York City.
